Bryan Woolley is the General Manager of Scarpetta New York.

Hailing originally from Seattle, WA, the hospitality bug bit Bryan when he was quite young. At 14, he started as a prep cook and busboy in a local diner, working long hours before and after school. Though arduous, he enjoyed his work and eventually moved on to several restaurants in the Seattle area before heading to New York to earn his BA in Corporate Communication at Bernard M. Baruch College.

It was in New York where Bryan garnered his true passion for the Hospitality Industry. He held numerous positions at various successful establishments, each teaching him valuable lessons and expanding his education in food, wine and service. At the classic Puglian restaurant Itrulli and the Rockefeller Center standard Alfredo of Rome, Bryan found his love for Italian wine and cuisine. At Alfredo, he created a flourishing cocktail program and was quickly promoted to Bar Manager and eventually Assistant General Manager.

Soon, Bryan was asked to open NoHo’s famed Spanish tapas bar Mercat, where he had a hand in almost every operational aspect of the business as Service Director, Assistant General Manager and Consultant on the opening of Mercat’s second restaurant.

At Eleven Madison Park, Bryan evolved his devotion to fine dining and true hospitality. While here, his contribution helped the restaurant achieve a New York Times 4 Star review. Next re-acquainting himself with the cocktails game, Bryan expanded the bar program at the Michelin Star, New York Times 3 Star Upper West Side restaurant, Dovetail.

With this knowledge, passion and experience, Bryan was asked to return to his Italian roots and join the Scarpetta family.
