As the General Manager of Scarpetta Las Vegas and DOCG Enoteca at the Cosmopolitan Resort, Mario Di Sihas continually dedicated his life to the hospitality industry.

While born in Newark, New Jersey, Mario actually grew up in Fort Lauderdale with his parents. By age 19, he opened his own restaurant in Florida but ultimately was lured across the country to opportunities in Las Vegas.

Mario began his Las Vegas career at Treasure Island in 1993, and worked his way up to General Manager of Francesco Italian Restaurant, one of Las Vegas’ premier dining venues. In 1998, he joined the Bellagio opening team to launch Osteria de Ciro and Le Cirque for the Maccioni famiy. Mario was the driving force behind the celebrated success of the restaurants. Both Osteria de Ciro and Le Cirque were critically acclaimed and voted “Best on the Strip” by Epicurean Awards. In addition, the restaurants were also awarded 5 Stars and received the prestigious 5 Diamond Award.

In 2004, Mario crossed paths with Wynn Resorts and accepted the position of General Manager of SW Steakhouse. Leading a tight-knit team, he secured a loyal following of patrons that have been nurtured for almost a decade. SW Steakhouse quickly became a frontrunner of steakhouses in Las Vegas as well as one of the top grossing restaurants in the United States.

Starting the next chapter of his veteran career, SCM is very proud and delighted to have Mario join us in Las Vegas, as the Director of Operations for both Scarpetta and D.O.C.G Enoteca at the Cosmopolitan Resort.

Mario is a family man. When he is not at the restaurants, his life is still on the go spending time with his wife Wendy and their four children Zaccari, Gabriella, Alessandro and Lorenzo…plus five dogs and two cats!
